- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1 tsp baking powder
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 1 cup sugar
- 2 large eggs
- 1–2 tbsp red food coloring
- 1 cup cream cheese, softened
- 1/2 cup butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and baking powder.
- In a large bowl, beat together vegetable oil and sugar until combined. Add eggs one at a time, then mix in buttermilk, food coloring, and vanilla.
- Gradually mix dry ingredients into wet ingredients until just combined.
- Scoop batter onto prepared baking sheets, spacing them apart. Bake for 10-12 minutes or until a toothpick comes out clean.
- Allow to cool on baking sheets for a few minutes then transfer to a wire rack to cool completely.
- For the filling, beat cream cheese, butter, powdered sugar, and vanilla until smooth.
- Flip half of the whoopie pies upside down, add cream cheese filling, and top with another pie.
- Serve immediately or refrigerate before serving for enhanced flavors.
Notes
Make sure the whoopie pies are completely cool before adding the filling to prevent melting.
