- 1 cup creamy or crunchy peanut butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup powdered sugar for rolling
Instructions
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In a large bowl, beat the softened butter with granulated sugar and brown sugar until fluffy.
- Beat in the peanut butter, followed by the eggs one at a time. Add the vanilla extract and mix until smooth.
- Gradually add the dry ingredients to the wet mixture, blending until just combined.
- Cover the bowl with plastic wrap and chill in the refrigerator for about 30 minutes.
- Roll the chilled dough into 1-inch balls, then roll in powdered sugar to coat.
- Place the balls on the prepared baking sheets, 2 inches apart, and bake for 10-12 minutes.
- Let the cookies sit for a few minutes on the baking sheet before transferring them to wire racks to cool completely.
