A creative twist on the classic Reuben sandwich, these bite-sized balls are packed with corned beef, sauerkraut, and Swiss cheese, served with a zesty Spicy Thousand Island dressing.

- 2 cups chopped corned beef
- 1 cup drained sauerkraut
- 1 cup shredded Swiss cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper
- 1/2 cup mayonnaise
- 1/4 cup ketchup
- 2 tablespoons hot sauce
- Oil for frying
Instructions
- In a large bowl, combine chopped corned beef, drained sauerkraut, and shredded Swiss cheese. Stir in garlic powder, onion powder, and cayenne.
- With clean hands, form tablespoon-sized portions of the mixture into balls.
- Chill the formed balls in the refrigerator for at least 30 minutes.
- In a small bowl, whisk together mayonnaise, ketchup, hot sauce, and seasoning for the Spicy Thousand Island dressing.
- Heat oil in a skillet over medium heat and fry the Reuben Balls in batches until golden brown, about 4–5 minutes.
- Drain on paper towels and serve warm with the dressing for dipping.
Notes
For a baking option, preheat the oven to 400°F and bake the balls for 20–25 minutes, flipping halfway through.
