Description

A creative twist on the classic Reuben sandwich, these bite-sized balls are packed with corned beef, sauerkraut, and Swiss cheese, served with a zesty Spicy Thousand Island dressing.

Ingredients

Scale
  • 2 cups chopped corned beef
  • 1 cup drained sauerkraut
  • 1 cup shredded Swiss cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 2 tablespoons hot sauce
  • Oil for frying

Instructions

  1. In a large bowl, combine chopped corned beef, drained sauerkraut, and shredded Swiss cheese. Stir in garlic powder, onion powder, and cayenne.
  2. With clean hands, form tablespoon-sized portions of the mixture into balls.
  3. Chill the formed balls in the refrigerator for at least 30 minutes.
  4. In a small bowl, whisk together mayonnaise, ketchup, hot sauce, and seasoning for the Spicy Thousand Island dressing.
  5. Heat oil in a skillet over medium heat and fry the Reuben Balls in batches until golden brown, about 4–5 minutes.
  6. Drain on paper towels and serve warm with the dressing for dipping.

Notes

For a baking option, preheat the oven to 400°F and bake the balls for 20–25 minutes, flipping halfway through.
