- 2 cups fresh broccoli, chopped
- 1 cup cheddar cheese, shredded
- 1/2 cup heavy cream
- 2 tbsp butter
- 1 tsp fresh thyme or rosemary
- 1 pie crust (store-bought or homemade)
- Salt and pepper to taste
- Olive oil for roasting
Instructions
- Preheat your oven to 425°F (220°C).
- Spread fresh broccoli on a baking sheet, drizzle with olive oil, season with salt and pepper, and roast for 15-20 minutes until tender and lightly charred.
- In a skillet over medium heat, melt butter and sauté chicken until golden brown and cooked through, about 7-10 minutes. Season with salt, pepper, and herbs.
- Pour in the heavy cream and bring to a gentle simmer. Whisk in the cheddar cheese until melted and smooth.
- In a large bowl, combine roasted broccoli, cooked chicken, and cheese sauce gently.
- Roll out your pie crust into a greased pie dish. Pour in the filling and cover with another crust if desired. Flute the edges and create slits on top to vent.
- Bake for 25-30 minutes or until the crust is golden brown and flaky.
- Let the pot pie cool for about 10 minutes before slicing and serving.
Notes
This pot pie can be made vegetarian by substituting chicken with cubed tofu or sautéed mushrooms. Feel free to add other vegetables like cauliflower or green beans.
