- 1 cup cream or whole milk
- 1 medium onion, diced
- 2 cloves garlic, minced

- 1 tablespoon fresh thyme or parsley, chopped
- 2 tablespoons flour
- 1 pie crust (store-bought or homemade)
- Olive oil, for roasting
- Salt and pepper, to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss broccoli florets with olive oil, salt, and pepper, and roast for 15-20 minutes until tender and caramelized.
- In a skillet, sauté diced chicken over medium heat until cooked through (5-7 minutes) and add onions and garlic until softened.
- Sprinkle flour over cooked chicken and mix to create a roux, cooking for 2 minutes.
- Gradually stir in cream or milk, stirring until mixture thickens.
- Add roasted broccoli and cheddar cheese to the mixture, stirring until cheese melts.
- Pour filling into pie crust, cover with top crust if using, sealing edges and cutting slits for steam ventilation.
- Brush the top with egg wash if desired, and bake for 30-35 minutes until crust is golden.
- Let rest for 10 minutes before serving.
