Ingredients

  • 1 lb boneless chicken breast or thighs
  • 2 cups fresh broccoli, roasted
  • 1 cup sharp cheddar cheese, grated
  • 1 pie crust (homemade or store-bought)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 1 cup carrots, diced
  • 1 cup peas
  • 1/4 cup all-purpose flour
  • 2 tbsp butter
  • Salt and pepper to taste
  • Fresh thyme and parsley, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Roast the broccoli in olive oil with salt and pepper until slightly crisp, about 15-20 minutes.
  3. In a large skillet, melt the butter over medium heat and add the diced onion and minced garlic. Cook until fragrant.
  4. Add the chicken and cook until slightly browned and cooked through.
  5. Stir in the flour to create a roux and cook until lightly golden.
  6. Pour in the broth while whisking to avoid lumps, then add in the roasted broccoli and cheddar cheese, stirring until melted.
  7. Pour the filling into the pie crust and cover with another crust, crimping the edges to seal.
  8. Cut slits in the top crust for steam to escape.
  9. Bake for 25-30 minutes until the crust is golden brown. Allow to cool for 10 minutes before serving.

Notes

Feel free to use leftover rotisserie chicken or any seasonal vegetables in the filling.
