- 1 lb boneless chicken breast or thighs
- 2 cups fresh broccoli, roasted
- 1 cup sharp cheddar cheese, grated
- 1 pie crust (homemade or store-bought)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups chicken or vegetable broth
- 1 cup carrots, diced
- 1 cup peas
- 1/4 cup all-purpose flour
- 2 tbsp butter
- Salt and pepper to taste
- Fresh thyme and parsley, to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Roast the broccoli in olive oil with salt and pepper until slightly crisp, about 15-20 minutes.
- In a large skillet, melt the butter over medium heat and add the diced onion and minced garlic. Cook until fragrant.
- Add the chicken and cook until slightly browned and cooked through.
- Stir in the flour to create a roux and cook until lightly golden.
- Pour in the broth while whisking to avoid lumps, then add in the roasted broccoli and cheddar cheese, stirring until melted.
- Pour the filling into the pie crust and cover with another crust, crimping the edges to seal.
- Cut slits in the top crust for steam to escape.
- Bake for 25-30 minutes until the crust is golden brown. Allow to cool for 10 minutes before serving.
Notes
Feel free to use leftover rotisserie chicken or any seasonal vegetables in the filling.
