- 2 pounds butternut squash, peeled and cubed
- 1 pound ground turkey
- 2 tablespoons olive oil
- 2 cloves fresh garlic, minced
- 1 medium onion, diced

- 1 teaspoon paprika
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the butternut squash: peel, cut, and cube into bite-sized pieces.
- In a large bowl, drizzle olive oil over the squash and season with salt, pepper, and fresh herbs. Toss to coat.
- Spread the squash in a single layer on a baking sheet and roast for 25 to 30 minutes, stirring halfway through.
- While the squash is roasting, heat a skillet over medium heat and add olive oil.
- Toss in the diced onions and minced garlic, sautéing until onions are translucent.
- Add ground turkey to the skillet, seasoning with salt, pepper, and paprika. Cook until browned and cooked through, about 7 to 10 minutes.
- Combine the roasted squash with the turkey in the skillet, gently stirring to meld flavors. Taste and adjust seasoning if necessary.
- Serve warm, garnished with extra fresh herbs if desired.

For a vegetarian option, substitute ground turkey with lentils or chickpeas.
