Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the butternut squash: peel, cut, and cube into bite-sized pieces.
  3. In a large bowl, drizzle olive oil over the squash and season with salt, pepper, and fresh herbs. Toss to coat.
  4. Spread the squash in a single layer on a baking sheet and roast for 25 to 30 minutes, stirring halfway through.
  5. While the squash is roasting, heat a skillet over medium heat and add olive oil.
  6. Toss in the diced onions and minced garlic, sautéing until onions are translucent.
  7. Add ground turkey to the skillet, seasoning with salt, pepper, and paprika. Cook until browned and cooked through, about 7 to 10 minutes.
  8. Combine the roasted squash with the turkey in the skillet, gently stirring to meld flavors. Taste and adjust seasoning if necessary.
