Ingredients

  • 1 medium Butternut squash
  • 1 head Garlic
  • 2 tablespoons Butter
  • 2 tablespoons Olive oil
  • Salt and Pepper to taste
  • 1/4 cup Cream or milk (or dairy-free alternative)

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the butternut squash in half lengthwise and scoop out the seeds.
  2. Prepare the garlic by slicing the top off the head, wrapping it in foil, and drizzling with olive oil.
  3. Drizzle the squash halves with olive oil and sprinkle with salt and pepper. Place both the garlic and squash on a baking sheet.
  4. Roast in the oven for about 40-50 minutes or until the squash is fork-tender and the garlic is caramelized.
  5. Let them cool for a few minutes, then scoop the squash flesh into a bowl. Squeeze out the roasted garlic cloves into the bowl.
  6. Mash the mixture together, adding butter and cream until well combined. Adjust seasoning with salt and pepper.
  7. Serve warm, garnished with olive oil or fresh herbs.
