- 4 firm pears (such as Bartlett or Bosc)
- 1 cup crumbled goat cheese
- 1/2 cup chopped walnuts
- 1/4 cup pure maple syrup
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh rosemary or thyme (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Slice pears in half lengthwise and scoop out the seeds.
- Place the halved pears cut side up in a parchment-lined baking dish and drizzle with olive oil.
- Season with salt and pepper.
- Roast the pears for 25-30 minutes or until soft and golden, turning halfway through.
- While the pears are roasting, combine chopped walnuts and maple syrup in a small saucepan over low heat for 5 minutes.
- Once pears are tender, remove from oven and top each pear with goat cheese.
- Broil for 2-3 minutes until the cheese is softened and slightly browned.
- Remove pears, drizzle with the warm maple-walnut mixture, and serve warm.
Notes
For added flavor, consider experimenting with spices or using pecans instead of walnuts.
