Ingredients

  • 4 firm pears (such as Bartlett or Bosc)
  • 1 cup crumbled goat cheese
  • 1/2 cup chopped walnuts
  • 1/4 cup pure maple syrup
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh rosemary or thyme (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice pears in half lengthwise and scoop out the seeds.
  3. Place the halved pears cut side up in a parchment-lined baking dish and drizzle with olive oil.
  4. Season with salt and pepper.
  5. Roast the pears for 25-30 minutes or until soft and golden, turning halfway through.
  6. While the pears are roasting, combine chopped walnuts and maple syrup in a small saucepan over low heat for 5 minutes.
  7. Once pears are tender, remove from oven and top each pear with goat cheese.
  8. Broil for 2-3 minutes until the cheese is softened and slightly browned.
  9. Remove pears, drizzle with the warm maple-walnut mixture, and serve warm.

Notes

For added flavor, consider experimenting with spices or using pecans instead of walnuts.
