  • 1/4 cup extra virgin olive oil
  • 2 tbsp lemon juice (freshly squeezed)

Instructions

  1. Cook the tortellini: Boil salted water and cook the tortellini according to package instructions. Drain and let cool.
  2. Prepare the roasted peppers: If using jarred, chop into pieces. If roasting fresh, roast at 450°F for 20-30 minutes until charred, then peel and chop.
  3. Make the dressing: Whisk together olive oil, lemon juice, salt, and pepper in a bowl.
  4. Combine ingredients: In a large bowl, mix tortellini, roasted peppers, and herbs. Pour dressing over and toss. Add Parmesan last.
