- 12 oz cheese tortellini (fresh or frozen)
- 2 cups roasted red peppers (jarred or freshly roasted)
- 1 cup freshly grated Parmesan cheese
- 1/4 cup fresh basil (chopped)
- 1/4 cup fresh parsley (chopped)
- 1/4 cup extra virgin olive oil
- 2 tbsp lemon juice (freshly squeezed)
- Salt to taste
- Black pepper to taste
Instructions
- Cook the tortellini: Boil salted water and cook the tortellini according to package instructions. Drain and let cool.
- Prepare the roasted peppers: If using jarred, chop into pieces. If roasting fresh, roast at 450°F for 20-30 minutes until charred, then peel and chop.
- Make the dressing: Whisk together olive oil, lemon juice, salt, and pepper in a bowl.
- Combine ingredients: In a large bowl, mix tortellini, roasted peppers, and herbs. Pour dressing over and toss. Add Parmesan last.
- Chill and serve: Refrigerate for at least 30 minutes before serving for the best flavor.
Notes
For a gluten-free option, choose gluten-free tortellini. Store leftovers in an airtight container in the refrigerator for up to three days.
