Instructions
- Prepare the Ingredients: If using whole roasted red peppers, peel and chop them. Dice the onion and crush the garlic.
- Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add diced onions and cook until translucent, about 5 minutes. Stir in the crushed garlic and sauté for another minute.
- Add the Tomatoes and Roasted Peppers: Toss in the chopped roasted red peppers and diced tomatoes. Stir well, allowing tomatoes to break down slightly, about 3-4 minutes.
- Pour in the Broth: Add vegetable or chicken broth, bringing the soup to a gentle simmer for about 15 to 20 minutes.
- Blend Away: For a smoother texture, use an immersion blender or transfer to a standard blender in batches and blend until creamy.
- Add the Gouda: Return the blended soup to the pot and stir in the Gouda cheese until melted. Adjust seasoning with salt and pepper as needed.
- Serve with Garnish: Ladle into bowls and garnish with fresh herbs or extra cheese, if desired.
