Ingredients

  • 8 tomatillos, husked and rinsed
  • 2 jalapeños, stems removed
  • 2 cloves garlic
  • 1 small sweet onion, chopped
  • 1/2 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Place tomatillos and jalapeños on a baking sheet and roast for 20-25 minutes until blistered.
  2. While roasting, heat a skillet over medium heat, add olive oil, and sauté chopped onion and garlic until golden.
  3. Let the roasted ingredients cool, then transfer them along with cilantro, lime juice, and salt to a blender.
  4. Blend until smooth or slightly chunky, adjusting lime or salt as needed.
  5. Transfer to a serving bowl and enjoy with tortilla chips or as a topping for grilled meats.
