Ingredients

  • 1 Lamb Shoulder
  • 2 tablespoons Fresh Rosemary, chopped
  • 4 cloves Garlic, minced
  • 1 Onion, sliced
  • Zest of 1 Lemon
  • 2 tablespoons Honey or Maple Syrup
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste

Instructions

  1. Preheat your oven to 325°F (160°C). Trim excess fat from the lamb and season generously with salt and pepper.
  2. In a large skillet, heat olive oil and sear the lamb on all sides until golden brown, about 4-5 minutes per side.
  3. Mix garlic, rosemary, lemon zest, and honey in a bowl to create the glaze.
  4. Transfer lamb to a roasting pan, pour glaze over, and add sliced onions around the meat. Cover with foil.
  5. Roast for 3-4 hours, until fork-tender. Remove foil for the last 30 minutes to caramelize the glaze, basting occasionally.
  6. Let the lamb rest for 15-20 minutes before slicing.

Notes

For substitutions, use a leg of lamb or pork shoulder. Fresh herbs can be replaced with thyme or oregano.
