- 6 oz Dark Chocolate (at least 70% cocoa)
- 4 oz Unsalted Butter
- 4 large Eggs
- 1 cup Granulated Sugar
- 1 cup All-Purpose Flour
- 1/2 cup Apricot Jam (or Raspberry Jam)
- 1 cup Heavy Cream
- 1 cup Powdered Sugar
Instructions
- Gather your ingredients: Make sure everything is measured out and at room temperature.
- Prepare the chocolate ganache: Melt dark chocolate and butter together in a heatproof bowl over simmering water.
- Whip the eggs and sugar: Beat until pale and fluffy.
- Combine the melted chocolate into the egg mixture and fold in the flour carefully.
- Bake the batter in a greased cake pan at 350°F (175°C) for 25 to 30 minutes.
- Prepare apricot jam in a saucepan until pourable.
- Assemble the cooled cake by spreading apricot jam between the layers.
- Make ganache topping by re-heating leftover chocolate mixture with heavy cream.
- Chill the cake and allow ganache to set before slicing.
Notes
Serve with whipped cream or vanilla ice cream. Pairs well with fruity coffee or dessert wine.
