Description

A classic chocolate cake layered with apricot jam and coated in rich chocolate ganache, perfect for any celebration.


Ingredients

  • 6 oz Dark Chocolate (at least 70% cocoa)
  • 4 oz Unsalted Butter
  • 4 large Eggs
  • 1 cup Granulated Sugar
  • 1 cup All-Purpose Flour
  • 1/2 cup Apricot Jam (or Raspberry Jam)
  • 1 cup Heavy Cream
  • 1 cup Powdered Sugar

Instructions

  1. Gather your ingredients: Make sure everything is measured out and at room temperature.
  2. Prepare the chocolate ganache: Melt dark chocolate and butter together in a heatproof bowl over simmering water.
  3. Whip the eggs and sugar: Beat until pale and fluffy.
  4. Combine the melted chocolate into the egg mixture and fold in the flour carefully.
  5. Bake the batter in a greased cake pan at 350°F (175°C) for 25 to 30 minutes.
  6. Prepare apricot jam in a saucepan until pourable.
  7. Assemble the cooled cake by spreading apricot jam between the layers.
  8. Make ganache topping by re-heating leftover chocolate mixture with heavy cream.
  9. Chill the cake and allow ganache to set before slicing.

Notes

Serve with whipped cream or vanilla ice cream. Pairs well with fruity coffee or dessert wine.
