Ingredients

  • 4 salmon fillets, skin-on
  • 2 lemons, sliced
  • 2 oranges, sliced
  • 4 tablespoons unsalted butter
  • Fresh dill, to taste
  • Fresh parsley, to taste
  • Salt, to taste
  • Pepper, to taste
  • Optional: thinly sliced bell peppers, asparagus, or summer squash

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut out enough parchment paper to create a pocket for each salmon fillet.
  3. Place each fillet in the middle of a parchment sheet, skin-side down.
  4. Sprinkle salt and pepper generously over the salmon.
  5. Add a thick pat of butter on top of each fillet, followed by slices of lemon and orange.
  6. Top with your choice of fresh herbs.
  7. Fold the parchment paper over the salmon, sealing the edges tightly.
  8. Place the packets on a baking sheet and bake for about 15-20 minutes.
  9. Open the packets carefully, letting steam escape. Serve immediately.

Ensure that you don’t overcook the salmon; it should flake easily but remain moist. Rest the fish for a few minutes after baking for optimal texture.
