- 2 Carrots (sliced)

- 2 tbsp Fresh dill (or thyme)
- 1 cup Heavy cream (or coconut milk)
- 1 Lemon (juiced)
- 2 tbsp Olive oil
- Salt and pepper to taste
Instructions
- Prepare the Ingredients: Start by chopping your vegetables. Dice the onions, slice the carrots, and cube the potatoes.
- Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the diced onions and cook until translucent. Then toss in minced garlic and herbs, cooking until fragrant.
- Add Vegetables: Stir in the carrots and potatoes, allowing them to sauté for a few minutes.
- Pour in the Broth: Add your broth and bring everything to a gentle simmer. Cook the vegetables for about 10-15 minutes.
- Cook the Salmon: Cut the salmon into bite-sized pieces and add them to the pot. Let simmer until they flake easily with a fork, around 5-7 minutes.
- Finish with Cream and Lemon: Stir in the cream and lemon juice, adjusting seasoning as needed.
- Serve and Enjoy: Ladle the soup into bowls and serve with crusty bread or fresh herbs on top.
Notes
For a lighter soup, consider reducing the cream or using additional broth. Fresh herbs enhance flavor greatly.
