- 1 cup unsweetened cocoa powder
- ½ cup granulated sugar
- ½ cup unsalted butter, softened
- 1 cup brown sugar
- ½ cup heavy cream
- 8 ounces dark chocolate, chopped
- 1 teaspoon sea salt
Instructions
- Prepare the Tart Crust: In a large mixing bowl, whisk together flour, cocoa powder, and granulated sugar. Add softened butter and mix until crumbly. Press mixture into a tart pan.
- Bake the Crust: Preheat oven to 350°F and bake for 15-20 minutes. Cool completely.
- Make the Salted Caramel: Heat brown sugar and butter in a saucepan until melted. Stir in heavy cream and simmer for 5-7 minutes until thickened. Remove from heat and stir in sea salt.
- Pour the Caramel: Pour caramel into cooled crust. Refrigerate for about 30 minutes.
- Prepare the Chocolate Ganache: Combine dark chocolate and heavy cream in a microwave-safe bowl. Heat until melted and smooth. Pour over set caramel layer.
- Chill and Serve: Refrigerate until ganache is set, about 1-2 hours. Sprinkle with sea salt, slice, and serve.
