Ingredients

  • 2 ripe Bananas, sliced
  • 1/2 cup Peanut Butter (creamy or crunchy)
  • 2 cups Whole Milk (or almond milk)
  • 1/2 cup Granulated Sugar (or brown sugar)
  • 1/4 cup Cornstarch
  • 1/4 teaspoon Salt
  • 1/2 cup Crushed Salty Peanuts
  • 1 teaspoon Vanilla Extract

Instructions

  1. In a medium saucepan, mix together sugar, cornstarch, and salt. Gradually whisk in milk over medium heat, stirring consistently until thickened (about 5-7 minutes).
  2. Once thickened, remove from heat and stir in peanut butter and vanilla extract until smooth.
  3. Layer sliced bananas in the bottom of a serving dish and pour half of the warm pudding over them.
  4. Add another layer of bananas and top with the remaining pudding.
  5. Sprinkle crushed salty peanuts on top.
  6. Let cool to room temperature, then refrigerate for at least 2 hours before serving.
  7. Serve with whipped cream or extra peanuts if desired.

Whisk continuously to avoid lumps and allow pudding to cool before serving to achieve creamy texture. Use fresh peanuts for stronger flavor.
