Instructions
- Preheat the oven to 350°F (175°C).
- Line a muffin tin with colorful cupcake liners.
- Sift together flour, cocoa powder, baking soda, baking powder, and sugar in a mixing bowl.
- Cream unsalted butter in a separate bowl until creamy, then gradually add sugar and beat until light and fluffy.
- Add eggs one at a time, mixing well after each addition, followed by vanilla and peppermint extracts.
- Gradually add dry ingredients to the wet mixture, alternating with whole milk until just combined.
- Spoon batter into the prepared tins, filling them about two-thirds full.
- Bake for 18-20 minutes, until a toothpick inserted comes out clean.
- Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
