- 2 lbs Beef Chuck, cut into 1–2 inch cubes
- 2 cups Apple Cider
- 4 Carrots, chopped
- 3 Potatoes, chopped
- 1 Onion, diced
- 3 cloves Garlic, minced
- 2 tsp Fresh Thyme
- 2 Bay Leaves
- 4 cups Beef Broth (low-sodium)
- Salt, to taste
- Black Pepper, to taste
- 1 tsp Paprika
- 1 tbsp Oil for searing
Instructions
- Prep the Ingredients: Cut the beef into cubes and season with salt and pepper. Chop the vegetables.
- Sear the Beef: In a large Dutch oven, heat oil over medium-high heat. Sear the beef until browned on all sides, then transfer to a plate.
- Sauté Aromatics: In the same pot, add more oil if needed and sauté the onions and garlic until soft.
- Deglaze the Pot: Pour in a little apple cider to deglaze and scrape the brown bits from the bottom.
- Combine Ingredients: Return the beef to the pot, add carrots, potatoes, fresh herbs, remaining apple cider, and beef broth, ensuring everything is submerged.
- Bring to a Simmer: Increase heat to simmer, cover, reduce heat to low, and cook for 2-3 hours until tender.
- Adjust Seasonings: Taste the stew and adjust seasonings as needed before serving.
- Serve Hot: Ladle into bowls, garnish with fresh herbs, and enjoy with crusty bread.
Notes
For added flavor, consider using brisket if beef chuck isn’t available. Vegetable broth can substitute beef broth for a vegetarian version.
