- 2 cups fresh corn or 1 can (15 oz) sweet corn, drained
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup milk
- 4 large eggs
- 1/4 cup fresh thyme, chopped
- 1/4 cup fresh chives, chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons butter, for greasing
- Salt and pepper, to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Butter a 9×13-inch baking dish.
- In a large bowl, combine the corn, cheddar cheese, herbs, salt, and pepper.
- Whisk together the eggs and milk in another bowl.
- Pour the egg mixture over the corn mixture and stir until combined.
- Transfer the mixture into the greased dish, spreading it evenly.
- Bake for 45 to 50 minutes until golden brown.
- Cool for 10 minutes before cutting and serving.
Notes
Add sautéed mushrooms or bacon for enhanced flavor. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
