- 8 oz oyster mushrooms
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1 tbsp fresh thyme, chopped
- Zest of 1 lemon
- Salt and pepper, to taste
- Vegetable oil, for frying
Instructions
- Wash and dry the mushrooms thoroughly. Trim any tough stems and slice them if needed.
- Set up a breading station with three bowls: one with flour seasoned with salt and pepper, the second with beaten eggs, and the third with breadcrumbs mixed with chopped herbs and lemon zest.
- Heat oil in a deep skillet until it reaches 350°F.
- Dredge each mushroom in flour, then dip it in egg, and coat it with breadcrumbs.
- Carefully add the coated mushrooms to the hot oil and fry in batches until golden brown, about 3-4 minutes.
- Use a slotted spoon to remove mushrooms and drain on paper towels.
- Serve warm, optionally garnished with fresh herbs or lemon juice.
