- 1 pound lean ground turkey
- 1 cup baby bella or cremini mushrooms, chopped
- 1 bell pepper, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh herbs (cilantro or parsley) for garnish
Instructions
- Preheat your oven: Set it to 400°F (200°C).
- Prepare the sweet potatoes: Wash, dry, poke holes, wrap in foil, and bake for about 45 minutes or until tender.
- Cook the filling: In a skillet over medium heat, sauté onions and garlic until fragrant. Add ground turkey, breaking it up. Cook until browned, about 7-10 minutes.
- Sauté vegetables: Add mushrooms and bell peppers to the turkey. Season with cumin, paprika, salt, and pepper. Cook until vegetables are tender, around 5 minutes.
- Mix fresh herbs: Stir in chopped herbs just before the filling is done cooking.
- Combine: Remove sweet potatoes from the oven and cool slightly. Slice open and scoop a bit out, then stuff generously with turkey mixture.
- Serve with toppings: Add cheese, yogurt, or salsa as desired.
