Description

A comforting and flavorful dish featuring tender beef, earthy mushrooms, and a rich soy marinade, perfect for effortless weeknight dinners.

Ingredients

Scale
  • 1 lb beef (flank steak or sirloin)
  • 1/2 cup soy sauce
  • 1/3 cup brown sugar
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 8 oz shiitake or button mushrooms, sliced
  • 2 green onions, sliced (for garnish)
  • 2 tbsp cornstarch
  • 1 tbsp sesame oil

Instructions

  1. Prepare the beef: Slice your beef into thin strips against the grain to ensure tenderness.
  2. Make the marinade: In a bowl, whisk together soy sauce, brown sugar, minced garlic, and freshly grated ginger.
  3. Combine ingredients: Place the sliced beef in the slow cooker. Pour the marinade over the beef, making sure every piece is well-coated.
  4. Add mushrooms: Toss in the sliced mushrooms.
  5. Cook: Set your slow cooker on low and let it cook for 6-8 hours or on high for about 3-4 hours.
  6. Thicken the sauce: About 30 minutes before serving, mix cornstarch with cold water and add it to the slow cooker.
  7. Garnish and serve: Sprinkle green onions over the top and serve over rice or noodles.

Notes

Feel free to substitute beef with chicken or tofu and add other vegetables like bell peppers.
