  • Salt and Pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the sweet potatoes by peeling and cubing them into evenly-sized pieces.
  3. Toss the sweet potatoes in a large mixing bowl with olive oil, salt, pepper, and minced garlic.
  4. Add the green beans to the bowl, drizzle with more olive oil, and sprinkle with fresh or dried herbs. Toss until coated.
  5. Arrange the mixture evenly on a lined baking sheet.
  6. Roast in the oven for about 25-30 minutes, or until tender and golden brown, tossing halfway through.
