- 2 large Sweet Potatoes, peeled and cubed
- 1 pound Fresh Green Beans, trimmed

- ¼ cup Olive Oil
- 2 tablespoons Fresh Rosemary or Thyme, chopped
- Salt and Pepper, to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Prepare the sweet potatoes by peeling and cubing them into evenly-sized pieces.
- Toss the sweet potatoes in a large mixing bowl with olive oil, salt, pepper, and minced garlic.
- Add the green beans to the bowl, drizzle with more olive oil, and sprinkle with fresh or dried herbs. Toss until coated.
- Arrange the mixture evenly on a lined baking sheet.
- Roast in the oven for about 25-30 minutes, or until tender and golden brown, tossing halfway through.
- Serve warm with a squeeze of fresh lemon on top.
Notes
