Ingredients

  • Large button or cremini mushrooms
  • Cream cheese
  • Freshly minced garlic
  • Fresh parsley and thyme
  • Parmesan cheese
  • Truffle oil
  • Breadcrumbs (panko or gluten-free)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Clean the mushrooms gently, removing any dirt and finely chopping the stems.
  3. Sauté the chopped mushroom stems and minced garlic in olive oil until fragrant (3-4 minutes).
  4. Combine sautéed mixture with cream cheese, parmesan cheese, herbs, and a splash of truffle oil; mix well.
  5. Season with salt and pepper to taste.
  6. Spoon the filling into each mushroom cap and place on a parchment-lined baking sheet.
  7. Drizzle more truffle oil on top.
  8. Bake for 20-25 minutes until mushrooms are tender and tops are golden.
  9. Allow to cool slightly before serving.

Notes

You can use Greek yogurt in place of cream cheese for a lighter version, or add sautéed spinach for extra nutrition.
