Ingredients
- Large button or cremini mushrooms
- Cream cheese
- Freshly minced garlic
- Fresh parsley and thyme
- Parmesan cheese
- Truffle oil
- Breadcrumbs (panko or gluten-free)
Instructions
- Preheat your oven to 375°F (190°C).
- Clean the mushrooms gently, removing any dirt and finely chopping the stems.
- Sauté the chopped mushroom stems and minced garlic in olive oil until fragrant (3-4 minutes).
- Combine sautéed mixture with cream cheese, parmesan cheese, herbs, and a splash of truffle oil; mix well.
- Season with salt and pepper to taste.
- Spoon the filling into each mushroom cap and place on a parchment-lined baking sheet.
- Drizzle more truffle oil on top.
- Bake for 20-25 minutes until mushrooms are tender and tops are golden.
- Allow to cool slightly before serving.
Notes
You can use Greek yogurt in place of cream cheese for a lighter version, or add sautéed spinach for extra nutrition.
