Description

Delightful energy balls made with nutty quinoa and rich dark chocolate, enhanced with a touch of sea salt.


Ingredients

Scale
  • 1 cup cooked quinoa
  • 1 cup dark chocolate chips (70% cacao recommended)
  • 1/2 cup nut butter (almond or peanut)
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  • Optional: shredded coconut, chia seeds, or chopped nuts

Instructions

  1. Rinse quinoa under cold water and cook according to package instructions (about 15 minutes). Allow to cool.
  2. In a large bowl, combine quinoa, dark chocolate chips, nut butter, maple syrup, and vanilla extract. Mix well.
  3. Add sea salt and stir to combine. Adjust sweetness or saltiness to taste.
  4. Refrigerate the mixture for at least 30 minutes until firm.
  5. Scoop about 2 tablespoons of the mixture and roll into balls. Place on a parchment-lined baking sheet.
  6. Store in an airtight container in the refrigerator for up to a week, or freeze for longer storage.

Notes

Make sure the quinoa is completely cooled before mixing to avoid melting the chocolate. Feel free to customize with different nuts or seeds.
