Delightful energy balls made with nutty quinoa and rich dark chocolate, enhanced with a touch of sea salt.
Ingredients

- 1 cup cooked quinoa
- 1 cup dark chocolate chips (70% cacao recommended)
- 1/2 cup nut butter (almond or peanut)
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon sea salt
- Optional: shredded coconut, chia seeds, or chopped nuts
Instructions
- Rinse quinoa under cold water and cook according to package instructions (about 15 minutes). Allow to cool.
- In a large bowl, combine quinoa, dark chocolate chips, nut butter, maple syrup, and vanilla extract. Mix well.
- Add sea salt and stir to combine. Adjust sweetness or saltiness to taste.
- Refrigerate the mixture for at least 30 minutes until firm.
- Scoop about 2 tablespoons of the mixture and roll into balls. Place on a parchment-lined baking sheet.
- Store in an airtight container in the refrigerator for up to a week, or freeze for longer storage.
Notes
Make sure the quinoa is completely cooled before mixing to avoid melting the chocolate. Feel free to customize with different nuts or seeds.
