- 1 pound fresh scallops
- 4 tablespoons unsalted butter
- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon lemon zest
- 2 cloves fresh garlic, minced
- 2 tablespoons fresh parsley or chives, chopped
- Salt and pepper to taste
Instructions
- Rinse the scallops under cold water and pat them dry with a paper towel.
- Sprinkle both sides with salt and pepper.
- Heat a skillet over medium-high heat until hot, then add a tablespoon of butter to melt.
- Place the scallops in the skillet, cooking for about 2-3 minutes without moving them to develop a golden crust.
- Flip the scallops gently and add the minced garlic, cooking for another 1-2 minutes until opaque.
- Remove from heat and stir in the remaining butter, lemon juice, and zest.
- Serve immediately, garnished with freshly chopped herbs.
Notes
Ensure scallops are thoroughly dry before cooking for a better sear. Pair with a light salad or creamy risotto.
