Ingredients

- 1 lb fresh scallops
- 1 cup heavy cream (or half and half)
- 2 tbsp Cajun seasoning (adjust to taste)
- 3 cloves garlic, minced
- 2 green onions, chopped
- 2 tbsp butter (or olive oil)
- Salt and pepper, to taste
Instructions
- Rinse the scallops under cold water and pat them dry with paper towels.
- Season both sides of the scallops with salt and pepper.
- In a skillet over medium-high heat, melt butter until bubbling, then add scallops without overcrowding.
- Sear for 2-3 minutes until golden, then flip and cook for another 2 minutes.
- Remove scallops from skillet and set aside. In the same skillet, lower heat and add more butter and garlic, letting it become fragrant.
- Pour in heavy cream, sprinkle in Cajun seasoning, stir to combine, and simmer until thickened.
- Return scallops to the pan, coat them with sauce, and fold in green onions.
- Serve warm, generously drizzled with spicy cream sauce, and garnish with parsley if desired.
Notes
For a lighter version, consider using half and half instead of heavy cream. Adjust spice level based on preference.
