Ingredients

  • 2 cloves fresh garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp sesame oil
  • 3 tbsp soy sauce (low-sodium)
  • 1 tbsp honey
  • 4 green onions, chopped
  • 2 tbsp sesame seeds
  • 2 cups jasmine or brown rice

Instructions

  1. In a large bowl, combine ground chicken, minced garlic, ginger, sesame oil, soy sauce, and honey. Mix gently with your hands until fully incorporated.
  2. Scoop about 2 tablespoons of the mixture and roll into meatballs. Place them on a greased baking sheet, spaced out for even cooking.
  3. Preheat the oven to 400°F (200°C) and bake meatballs for about 20 minutes or until golden and fully cooked.
  4. For the sauce, whisk together soy sauce, honey, and sesame oil in a small saucepan. Heat gently until it bubbles and thickens slightly.
  5. Fluff your rice, top with meatballs, drizzle with sauce, and garnish with green onions and sesame seeds.
  6. Optionally, add sautéed vegetables or a side salad for extra color.
