Ingredients

  • 2 lbs bone-in short ribs
  • 2 medium carrots, chopped
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 4 cups beef or vegetable broth
  • 1 cup red wine (optional)
  • Fresh thyme sprigs
  • Fresh rosemary sprigs
  • Salt and pepper to taste
  • Olive oil for searing

Instructions

  1. Season short ribs with salt and pepper. Heat a large pot over medium-high heat and add olive oil. Sear short ribs on all sides until browned.
  2. Remove short ribs and sauté chopped onions and carrots in the same pot for 4-5 minutes.
  3. Add minced garlic and tomato paste, cooking for 1-2 minutes until fragrant.
  4. Deglaze the pot with red wine, scraping the bottom for flavor, and let simmer for a few minutes.
  5. Return the short ribs to the pot, add broth and herbs, and bring to a gentle simmer. Cover and cook for 150 to 180 minutes.
  6. Once tender, taste and adjust seasoning. Remove herb sprigs and serve hot, garnished with parsley if desired.

Notes

Feel free to substitute short ribs with chuck roast or mushrooms for a vegetarian option. Use vegetable broth for a lighter dish.
