- 2 lbs bone-in short ribs
- 2 medium carrots, chopped
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 4 cups beef or vegetable broth
- 1 cup red wine (optional)
- Fresh thyme sprigs
- Fresh rosemary sprigs
- Salt and pepper to taste
- Olive oil for searing
Instructions
- Season short ribs with salt and pepper. Heat a large pot over medium-high heat and add olive oil. Sear short ribs on all sides until browned.
- Remove short ribs and sauté chopped onions and carrots in the same pot for 4-5 minutes.
- Add minced garlic and tomato paste, cooking for 1-2 minutes until fragrant.
- Deglaze the pot with red wine, scraping the bottom for flavor, and let simmer for a few minutes.
- Return the short ribs to the pot, add broth and herbs, and bring to a gentle simmer. Cover and cook for 150 to 180 minutes.
- Once tender, taste and adjust seasoning. Remove herb sprigs and serve hot, garnished with parsley if desired.
Notes
Feel free to substitute short ribs with chuck roast or mushrooms for a vegetarian option. Use vegetable broth for a lighter dish.
