Ingredients

- 1 pound large raw shrimp
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Tortillas (flour, corn, or whole wheat)
Instructions
- In a bowl, combine shrimp, lime juice, cumin, chili powder, garlic powder, salt, and pepper. Marinate for 15 to 30 minutes.
- Slice the bell peppers and onion into thin strips. Season lightly with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the marinated shrimp and sauté for 2-3 minutes per side until cooked through.
- Add the sliced peppers and onion to the skillet and stir frequently for another 3-4 minutes until vegetables are tender-crisp.
- Return the shrimp to the skillet, mix well, and heat for an additional minute. Serve immediately with warm tortillas and favorite toppings.
Notes
Don’t overcrowd the skillet to ensure even cooking. Feel free to customize with favorite toppings like guacamole or salsa.
