Description

A delightful Shrimp Quesadilla filled with savory shrimp, melted cheese, and fresh herbs, perfect for family gatherings and celebrations.


Ingredients

  • 1 lb large shrimp, cleaned and deveined
  • 1 cup Monterey Jack cheese (or sharp cheddar)
  • 4 large flour tortillas
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1/4 teaspoon cayenne pepper (optional)
  • Oil for cooking

Instructions

  1. Season shrimp with salt, pepper, and spices. If using frozen, thaw them in cold water.
  2. Heat oil in a skillet over medium-high heat and cook shrimp for 2-3 minutes on each side until pink and opaque.
  3. In the same skillet, add a little more oil and sauté diced vegetables and garlic until soft.
  4. On half of each tortilla, layer cheese, shrimp, vegetables, and herbs. Fold tortilla.
  5. Cook filled tortillas in a clean skillet over medium heat for 3-4 minutes on each side until golden brown and cheese melts.
  6. Slice into wedges and serve hot with salsa or guacamole.

Notes

Don’t overcrowd the skillet while cooking shrimp. Use fresh ingredients for the best flavor.
