Ingredients

- 1 lb large shrimp, cleaned and deveined
- 1 cup Monterey Jack cheese (or sharp cheddar)
- 4 large flour tortillas
- 1/2 cup fresh cilantro, chopped
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1 clove garlic, minced
- Salt and pepper to taste
- 1/4 teaspoon cayenne pepper (optional)
- Oil for cooking
Instructions
- Season shrimp with salt, pepper, and spices. If using frozen, thaw them in cold water.
- Heat oil in a skillet over medium-high heat and cook shrimp for 2-3 minutes on each side until pink and opaque.
- In the same skillet, add a little more oil and sauté diced vegetables and garlic until soft.
- On half of each tortilla, layer cheese, shrimp, vegetables, and herbs. Fold tortilla.
- Cook filled tortillas in a clean skillet over medium heat for 3-4 minutes on each side until golden brown and cheese melts.
- Slice into wedges and serve hot with salsa or guacamole.
Notes
Don’t overcrowd the skillet while cooking shrimp. Use fresh ingredients for the best flavor.
