Ingredients

  • 1/2 cup flour
  • 1 lb Andouille or smoked sausage, sliced
  • 1 lb shrimp, peeled and deveined
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 cup celery, chopped
  • 4 cups chicken or seafood broth
  • 2 bay leaves
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 tsp cayenne pepper
  • 1 can diced tomatoes (optional)
  • 2 cups cooked rice (for serving)
  • Fresh parsley, for garnish

Instructions

  1. In a large, heavy-bottomed pot, heat oil and flour over medium heat, stirring continuously for about 20 minutes until the roux turns a deep brown color.
  2. Add the chopped onion, celery, and bell pepper to the roux, sautéing for 5-7 minutes until tender.
  3. Stir in the sliced sausage and cook for 5 minutes to brown slightly.
  4. Pour in the broth and add bay leaves, thyme, oregano, cayenne, and tomatoes (if using). Bring to a gentle simmer and cook for 30 minutes.
  5. Just before serving, add the shrimp and cook for an additional 5-7 minutes until pink and opaque.
  6. Adjust seasoning as needed. Serve hot over rice and garnish with fresh parsley.

Notes

If the gumbo is too thick, add more broth. Allowing it to sit off heat lets the flavors meld beautifully.
