Ingredients

- 1 lb large raw shrimp, deveined
- 1 cup tempura batter mix
- 1 cup cold sparkling water
- Optional vegetables (slices of sweet potato, zucchini, or bell peppers)
- For the dipping sauce: soy sauce, mirin, dashi
Instructions
- Peel and devein the shrimp, leaving the tails intact. Pat them dry.
- In a bowl, mix tempura batter with cold sparkling water until slightly lumpy.
- Heat oil in a skillet to about 350°F (175°C).
- Dip each shrimp in the batter and carefully fry in hot oil for 2-3 minutes until golden brown.
- Drain on paper towels and serve hot with dipping sauce.
Notes
Use cold shrimp for better frying results and do not overcrowd the pan while frying.
