Ingredients

- 1 cup cottage cheese
- 2 eggs
- 1/4 cup milk
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 cup flour (whole wheat or all-purpose)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix the wet ingredients: In a bowl, combine cottage cheese, eggs, and milk; whisk until smooth. Stir in honey and vanilla.
- Combine the dry ingredients: In another bowl, mix rolled oats, flour, baking powder, baking soda, and salt.
- Fold together the mixtures until just combined.
- Portion the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Cool in the tin for a few minutes before transferring to a wire rack.
Notes
Allow the muffins to rest for a few minutes to enhance the flavor. They freeze well for up to three months.
