Ingredients

  • 2 eggs
  • 1/4 cup milk
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 cup flour (whole wheat or all-purpose)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the wet ingredients: In a bowl, combine cottage cheese, eggs, and milk; whisk until smooth. Stir in honey and vanilla.
  3. Combine the dry ingredients: In another bowl, mix rolled oats, flour, baking powder, baking soda, and salt.
  4. Fold together the mixtures until just combined.
  5. Portion the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  7. Cool in the tin for a few minutes before transferring to a wire rack.

Notes

Allow the muffins to rest for a few minutes to enhance the flavor. They freeze well for up to three months.
