- 1 cup dried fruits (raisins, dried cranberries, apricots)
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup butter, softened
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup nuts (walnuts or pecans)
- Zest of 1 orange (optional)
- 1 tsp vanilla extract (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8-inch loaf pan.
- In a large bowl, whisk together the flour, baking powder, cinnamon, and nutmeg.
- In another bowl, beat the butter and sugar until creamy. Add the eggs one at a time, mixing well after each.
- Fold the dried fruits and nuts into the wet mixture.
- Gradually incorporate the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack.

Let the cake sit for a day before serving for improved flavor. Store in an airtight container at room temperature for up to a week.
