Description

A delightful Simple Fruit Cake filled with dried fruits and nuts, perfect for any occasion.


Ingredients

  • 1 cup dried fruits (raisins, dried cranberries, apricots)
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup butter, softened
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup nuts (walnuts or pecans)
  • Zest of 1 orange (optional)
  • 1 tsp vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, and nutmeg.
  3. In another bowl, beat the butter and sugar until creamy. Add the eggs one at a time, mixing well after each.
  4. Fold the dried fruits and nuts into the wet mixture.
  5. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack.
