Ingredients

- 1 beef roast (shoulder or brisket)
- 1 cup BBQ sauce
- 1 large onion, chopped
- 4 garlic cloves, minced
- 1 tablespoon paprika
- 2 tablespoons brown sugar
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- Optional: 1 tablespoon Worcestershire sauce
- Optional: 1 tablespoon apple cider vinegar
Instructions
- Pat the beef dry with paper towels and season generously with salt and pepper.
- In a hot skillet, add oil and sear the beef on all sides until browned (about 3-4 minutes per side).
- In the same skillet, sauté chopped onions until tender and translucent. Add minced garlic and cook for another minute until fragrant.
- Transfer the beef to the slow cooker, top with sautéed onions and garlic, and pour BBQ sauce over the top. Add any optional seasonings if using.
- Cover and cook on low for 8 hours or high for 4-5 hours until beef can be shredded easily.
- Remove beef from the slow cooker, shred it using two forks, and return it to the sauce to soak up more flavor before serving.
Notes
Let the beef rest a few minutes before shredding to retain moisture. Keep the lid on the slow cooker during cooking to prevent steam loss.
