Ingredients

  • 1 beef roast (shoulder or brisket)
  • 1 cup BBQ sauce
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon paprika
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • Optional: 1 tablespoon Worcestershire sauce
  • Optional: 1 tablespoon apple cider vinegar

Instructions

  1. Pat the beef dry with paper towels and season generously with salt and pepper.
  2. In a hot skillet, add oil and sear the beef on all sides until browned (about 3-4 minutes per side).
  3. In the same skillet, sauté chopped onions until tender and translucent. Add minced garlic and cook for another minute until fragrant.
  4. Transfer the beef to the slow cooker, top with sautéed onions and garlic, and pour BBQ sauce over the top. Add any optional seasonings if using.
  5. Cover and cook on low for 8 hours or high for 4-5 hours until beef can be shredded easily.
  6. Remove beef from the slow cooker, shred it using two forks, and return it to the sauce to soak up more flavor before serving.

Notes

Let the beef rest a few minutes before shredding to retain moisture. Keep the lid on the slow cooker during cooking to prevent steam loss.
