- 4 large Yukon Gold or Russet potatoes, diced
- 1 cup button or cremini mushrooms, chopped
- 3 cloves fresh garlic, minced
- 1 medium onion, chopped
- 2 tablespoons Cajun seasoning
- 4 cups veggie broth
- 1/2 cup heavy cream (optional)
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Prep Your Ingredients: Peel and dice the potatoes, chop the mushrooms, onions, and mince the garlic.
- Sauté Aromatics: Heat a splash of olive oil in a skillet, then sauté the onions and garlic until translucent.
- Combine in the Slow Cooker: Add the sautéed mixture to the slow cooker, then toss in the potatoes, mushrooms, and Cajun seasoning. Pour in the veggie broth and stir.
- Cook on Low: Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Blend: Use an immersion blender to blend part of the soup for a creamier texture if desired.
- Finish and Serve: Stir in cream if using, season with salt and pepper, ladle into bowls, and garnish with fresh herbs.
Notes
Feel free to adjust the spice level of the Cajun seasoning and add any extra vegetables you have on hand.
