- 1 lb ground meat (lamb, beef, or turkey)
- 8 oz fresh mushrooms (cremini or button), chopped
- 2 cups diced vegetables (carrots, peas, or your choice)
- 2 cups sharp cheddar cheese, shredded
- 1 cup creamy Gouda cheese, shredded
- 2 lbs starchy potatoes (Russet or Yukon Gold), peeled and chopped
- 2 cups beef or vegetable broth
- 1 tsp fresh thyme (or dried)
- 1 tsp fresh rosemary (or dried)
- 1 tbsp Worcestershire sauce
- Salt and pepper to taste
- 2 tbsp butter for mashed potatoes
Instructions
- Prep the ingredients: Dice vegetables and mushrooms; set aside. Chop the potatoes and set aside.
- Sauté the ground meat in a skillet over medium heat until browned. Add mushrooms and cook until they’ve released moisture.
- In the slow cooker, layer the sautéed meat, mushrooms, diced vegetables, thyme, rosemary, Worcestershire sauce, salt, and pepper.
- Pour broth over the mixture, ensuring it’s moist but not soupy.
- Boil potatoes until tender, then drain and mash with butter and cheese until creamy.
- Spread mashed potatoes over the meat mixture in the slow cooker.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, sprinkle additional cheese on top and cover to melt.
- Serve hot, garnished with fresh herbs if desired.
Notes
Feel free to add extra vegetables or use lentils for a vegetarian option. For lower-carb, substitute with cauliflower mash.
