Description

A comforting and hearty shepherd’s pie layered with seasoned ground meat, earthy mushrooms, and creamy cheesy mashed potatoes, cooked slowly for rich flavor.


Ingredients

  • 1 lb ground meat (lamb, beef, or turkey)
  • 8 oz fresh mushrooms (cremini or button), chopped
  • 2 cups diced vegetables (carrots, peas, or your choice)
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup creamy Gouda cheese, shredded
  • 2 lbs starchy potatoes (Russet or Yukon Gold), peeled and chopped
  • 2 cups beef or vegetable broth
  • 1 tsp fresh thyme (or dried)
  • 1 tsp fresh rosemary (or dried)
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 2 tbsp butter for mashed potatoes

Instructions

  1. Prep the ingredients: Dice vegetables and mushrooms; set aside. Chop the potatoes and set aside.
  2. Sauté the ground meat in a skillet over medium heat until browned. Add mushrooms and cook until they’ve released moisture.
  3. In the slow cooker, layer the sautéed meat, mushrooms, diced vegetables, thyme, rosemary, Worcestershire sauce, salt, and pepper.
  4. Pour broth over the mixture, ensuring it’s moist but not soupy.
  5. Boil potatoes until tender, then drain and mash with butter and cheese until creamy.
  6. Spread mashed potatoes over the meat mixture in the slow cooker.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  8. About 30 minutes before serving, sprinkle additional cheese on top and cover to melt.
  9. Serve hot, garnished with fresh herbs if desired.

Notes

Feel free to add extra vegetables or use lentils for a vegetarian option. For lower-carb, substitute with cauliflower mash.
