- 1 lb ground beef or lamb
- 1 medium onion, chopped
- 2 medium carrots, diced
- 1 cup peas
- 3 cloves garlic, minced
- 2 cups beef or vegetable broth
- 1 tsp fresh thyme, chopped
- 1 tsp fresh rosemary, chopped
- 4 medium potatoes, peeled and diced
- 1/2 cup shredded cheddar cheese
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- Prepare the Ingredients: Chop the vegetables and mince the garlic. Set aside.
- Brown the Meat: In a skillet over medium heat, sauté the ground meat until it’s browned.
- Combine Everything: In your slow cooker, layer the browned meat, garlic, and vegetables. Pour in the broth, adding fresh herbs for seasoning. Stir gently to combine.
- Set the Slow Cooker: Cover and set on low for 6-7 hours or high for 3-4 hours.
- Prepare the Mashed Potatoes: Boil the potatoes until tender. Mash with butter, salt, and cheese until creamy.
- Assemble and Cook Again: Transfer filling to a baking dish and top with mashed potatoes. Cook on high for another 30 minutes.
Notes
For a meatless option, substitute ground meat with lentils or mushrooms.
