Ingredients

  • 1 lb ground beef or lamb
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 1 cup peas
  • 3 cloves garlic, minced
  • 2 cups beef or vegetable broth
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • 4 medium potatoes, peeled and diced
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients: Chop the vegetables and mince the garlic. Set aside.
  2. Brown the Meat: In a skillet over medium heat, sauté the ground meat until it’s browned.
  3. Combine Everything: In your slow cooker, layer the browned meat, garlic, and vegetables. Pour in the broth, adding fresh herbs for seasoning. Stir gently to combine.
  4. Set the Slow Cooker: Cover and set on low for 6-7 hours or high for 3-4 hours.
  5. Prepare the Mashed Potatoes: Boil the potatoes until tender. Mash with butter, salt, and cheese until creamy.
  6. Assemble and Cook Again: Transfer filling to a baking dish and top with mashed potatoes. Cook on high for another 30 minutes.
