Description
A heartwarming dish featuring tender beef bites and creamy potatoes, simmered in a rich garlic butter sauce. Perfect for family gatherings or cozy dinners.
Ingredients
Scale
- 2 lbs beef (chuck or brisket), cut into bite-sized pieces
- 1.5 lbs baby potatoes, halved
- 4 garlic cloves, minced
- 4 tbsp butter, melted
- 1 cup beef broth
- Salt and pepper, to taste
- 1 tsp thyme
- 1 tsp rosemary
- Optional: 2 cups of carrots or celery, chopped
Instructions
- Prepare the ingredients: Start by cutting your beef into bite-sized pieces. Wash and halve the baby potatoes, and mince fresh garlic.
- Sear the beef (optional): In a skillet over medium heat, melt 1 tablespoon of butter and sear the beef pieces until they develop a golden brown crust.
- Layer in the slow cooker: Place the seared beef at the bottom, followed by the potatoes. Toss in the minced garlic, salt, and pepper, along with any optional veggies.
- Make the sauce: In a bowl, mix melted butter, beef broth, and herbs. Pour this over the beef and potatoes, ensuring everything is coated.
- Cook: Cover the slow cooker and set it on low for 6-8 hours, or high for 3-4 hours.
- Serve and enjoy: Stir gently before serving, garnished with fresh herbs if desired.
Notes
For a richer flavor, searing the beef is recommended. Adjust the garlic quantity for a stronger aroma.
