- 2 pounds beef chuck, cut into bite-sized chunks
- 1.5 pounds baby potatoes
- 4 cloves fresh garlic, minced
- 4 tablespoons unsalted butter
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 onion, chopped
- 2 cups beef broth
Instructions
- Prepare the beef: Cut the beef into bite-sized chunks. Season generously with salt and pepper.
- Sauté aromatics: In a skillet, melt a tablespoon of butter over medium heat. Add minced garlic and chopped onion, sautéing until fragrant and translucent.
- Layer in the slow cooker: Place the seasoned beef at the bottom of the slow cooker. Top with sautéed onions and garlic, followed by baby potatoes.
- Sprinkle the fresh herbs over the top, and pour beef broth evenly, ensuring the potatoes are partially submerged.
- Cut the remaining butter into small cubes and dot them over the top of the mixture.
- Cover and cook on low for 6-8 hours or high for 4-6 hours.
- Serve and enjoy: Once cooking time is up, stir gently and serve hot.
