- 2 lbs beef (chuck roast or stew meat)
- 1.5 lbs baby Yukon Gold or red potatoes
- 4 cloves garlic, minced
- 4 tbsp butter
- 2 cups beef or chicken broth
- 1 onion, chopped (optional)
- 1 tsp dried thyme or rosemary
- Salt and pepper to taste
Instructions
- Cut the beef into bite-sized pieces. If using onion, chop it finely. For garlic, press or mince the fresh cloves.
- In a skillet, melt butter over medium heat. Sauté the garlic (and onion, if using) until fragrant, about 2 minutes.
- Place the beef bites at the bottom of your slow cooker, followed by the potatoes. Pour the sautéed garlic and butter mixture on top, then add the broth. Season with salt, pepper, and your choice of herbs.
- Put the lid on your slow cooker and set it to low for 6-8 hours or high for 4-5 hours.
- When ready, give it a gentle stir and taste for seasoning adjustments. Serve hot, garnished with fresh herbs if desired.
Notes
For added richness, drizzle some extra melted garlic butter over the top before serving. To thicken the sauce, whisk in a tablespoon of cornstarch mixed with cold water during the last 30 minutes of cooking.
