- 2 pounds chuck roast, cut into large chunks
- 4 medium Yukon Gold or Russet potatoes, peeled and chopped
- 4 cloves garlic, minced
- 1/2 cup unsalted butter
- 2 cups beef broth
- 1 teaspoon dried thyme or rosemary
- 1 onion, chopped (optional)
- Salt and pepper to taste
Instructions
- Prep the Ingredients: Start by cutting the chuck roast into large chunks and size them so they cook evenly. Peel and chop your potatoes into bite-sized pieces.
- Sauté Garlic: In a skillet, melt butter over medium heat, add minced garlic, and sauté for a couple of minutes until fragrant.
- Combine Ingredients: Place the beef, potatoes, and any optional onions in the slow cooker. Pour the garlic butter over the top, followed by the broth.
- Season: Generously sprinkle salt and pepper to taste.
- Cook: Set your slow cooker to low for 6-8 hours or on high for 3-4 hours, until the beef is fork-tender.
- Finish & Serve: When everything is beautifully cooked, serve your dish directly from the slow cooker.
Notes
For added flavor, consider searing the beef chunks in the skillet before placing them in the slow cooker.
