- 3 lbs Beef Roast (Chuck or Brisket)
- 4 Carrots, chopped
- 4 Potatoes, quartered
- 1 Onion, chopped
- 4 cups Beef Broth
- 4 cloves Garlic, minced
- 2 sprigs Fresh Thyme
- 2 sprigs Fresh Rosemary
- Salt and Pepper to taste
Instructions
- Prepare the Ingredients: Season your beef roast liberally with salt and pepper. Heat a skillet over medium-high heat and sear the meat on all sides until brown.
- Add to the Slow Cooker: Place the seared roast in the slow cooker, then layer the chopped vegetables around it.
- Make the Broth Mixture: In a bowl, mix your beef broth, minced garlic, and herbs, then pour over the roast and vegetables.
- Set the Slow Cooker: Close the lid, and set it on low for 8-10 hours or high for 4-6 hours.
- Finish and Serve: Remove the roast, let it rest for 10 minutes, then slice and serve with the veggies and juices.
Notes
For added flavor, consider adding Worcestershire sauce or balsamic vinegar to the broth mixture.
