  • 3 lbs Beef Roast (Chuck or Brisket)
  • 4 Carrots, chopped
  • 4 Potatoes, quartered
  • 1 Onion, chopped
  • 4 cups Beef Broth
  • 4 cloves Garlic, minced
  • 2 sprigs Fresh Thyme
  • 2 sprigs Fresh Rosemary
  • Salt and Pepper to taste

Instructions

  1. Prepare the Ingredients: Season your beef roast liberally with salt and pepper. Heat a skillet over medium-high heat and sear the meat on all sides until brown.
  2. Add to the Slow Cooker: Place the seared roast in the slow cooker, then layer the chopped vegetables around it.
  3. Make the Broth Mixture: In a bowl, mix your beef broth, minced garlic, and herbs, then pour over the roast and vegetables.
  4. Set the Slow Cooker: Close the lid, and set it on low for 8-10 hours or high for 4-6 hours.
  5. Finish and Serve: Remove the roast, let it rest for 10 minutes, then slice and serve with the veggies and juices.
