Ingredients

- 1 chuck roast (about 3–4 lbs)
- 4 cups beef broth
- 3 carrots, chopped
- 3 potatoes, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 sprigs rosemary
- 2 sprigs thyme
- 1 cup red wine (optional)
- Salt and pepper to taste
- 1 teaspoon paprika (optional)
Instructions
- Season the beef roast generously with salt and pepper.
- Sear the roast in a skillet over medium-high heat until browned on all sides.
- Transfer the roast to your slow cooker and add chopped onions, carrots, and potatoes around it.
- Add minced garlic and fresh herbs on top.
- Pour in the beef broth and red wine, if using.
- Set the slow cooker to low for 7-8 hours, or high for 4-5 hours.
- Add in any additional vegetables for the last 30 minutes of cooking.
- Taste the broth and adjust seasoning before serving.
Notes
Allow the roast to rest for 10-15 minutes before slicing for maximum tenderness.
