Description

A comforting Slow Cooker Pot Roast filled with tender beef, rich broth, and hearty vegetables, perfect for family gatherings.


Ingredients

  • 1 chuck roast (about 34 lbs)
  • 4 cups beef broth
  • 3 carrots, chopped
  • 3 potatoes, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • 1 cup red wine (optional)
  • Salt and pepper to taste
  • 1 teaspoon paprika (optional)

Instructions

  1. Season the beef roast generously with salt and pepper.
  2. Sear the roast in a skillet over medium-high heat until browned on all sides.
  3. Transfer the roast to your slow cooker and add chopped onions, carrots, and potatoes around it.
  4. Add minced garlic and fresh herbs on top.
  5. Pour in the beef broth and red wine, if using.
  6. Set the slow cooker to low for 7-8 hours, or high for 4-5 hours.
  7. Add in any additional vegetables for the last 30 minutes of cooking.
  8. Taste the broth and adjust seasoning before serving.

Notes

Allow the roast to rest for 10-15 minutes before slicing for maximum tenderness.
