Ingredients

- 1 pound smoked chicken (boneless thighs or breasts)
- 2 cups green chiles (fresh or canned)
- 4 large flour tortillas (or corn for gluten-free)
- 1 cup shredded Monterey Jack cheese (or cheddar)
- 1 cup sour cream (or Greek yogurt)
- 2 cloves garlic (minced)
- 1 onion (chopped)
- 1 teaspoon cumin
- Fresh cilantro (for garnishing)
- Lime juice (to taste)
Instructions
- Marinate chicken with olive oil, minced garlic, cumin, and salt. Smoke on low heat for about 2 hours or roast at 375°F for 25-30 minutes until tender.
- Shred the cooked chicken and sauté chopped onions and green chiles in a skillet until soft. Mix the chicken with the sautéed mixture and season to taste.
- Lay out a tortilla, add a scoop of the chicken mixture, and top with cheese. Fold and roll tightly.
- In a non-stick skillet, grill the burritos over medium heat until golden and crispy, about 3 minutes per side.
- Slice in half and serve with sour cream, fresh cilantro, and lime wedges.
Notes
Experiment with different cheeses and additional veggies to suit your taste. For a vegetarian option, substitute chicken with sautéed mushrooms.
