Ingredients

- 8 oz smoked gouda, shredded
- 1 large onion, finely sliced
- 8 oz cream cheese, softened
- 1/2 cup sour cream or Greek yogurt
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 2 tbsp fresh herbs (thyme or chives), chopped
- Salt and pepper to taste
Instructions
- Slice the onions into even pieces for caramelizing.
- Heat the olive oil in a medium skillet over medium heat.
- Add the onions and a pinch of salt; sauté for about 10-15 minutes until golden brown.
- Stir in the minced garlic and sauté for another minute.
- Remove from heat and let cool slightly.
- Preheat your oven to 375°F (190°C).
- Combine the softened cream cheese, sour cream, and smoked gouda in a mixing bowl.
- Mix in the sautéed onions and garlic until well combined; season with salt, pepper, and fresh herbs.
- Transfer the mixture to a small baking dish and smooth out the top.
- Bake for 20-25 minutes or until bubbly and golden on top.
- Serve warm with veggies, tortilla chips, or bread.
