Ingredients

  • 8 ounces smoked salmon, flaked

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions and garlic until soft and fragrant for about 4-5 minutes.
  2. Add diced potatoes and stir, cooking for an additional 5 minutes.
  3. Pour in vegetable broth and bring to a gentle simmer. Cook for 15-20 minutes, until the potatoes are fork-tender.
  4. Gently fold in the smoked salmon and cream or milk, stirring until combined and heated through.
