- 3 cloves garlic, minced
- 3 Yukon Gold potatoes, diced
- 4 cups vegetable broth
- 1 cup heavy cream or milk
- 8 ounces smoked salmon, flaked
- Fresh dill or chives for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions and garlic until soft and fragrant for about 4-5 minutes.
- Add diced potatoes and stir, cooking for an additional 5 minutes.
- Pour in vegetable broth and bring to a gentle simmer. Cook for 15-20 minutes, until the potatoes are fork-tender.
- Gently fold in the smoked salmon and cream or milk, stirring until combined and heated through.
- Finish with fresh herbs, salt, and pepper to taste. Serve warm.
Notes
For a dairy-free version, substitute coconut milk for cream. Additional vegetables can be added for variety.
